Ingredients :
Ikai Organic Matta Rice : 1 cup
Water : 2.5 cups ( If making in Pressure Cooker rice and water ratio 1:2.5 ). If cooking in open vessel use plenty of water so that the rice is fully covered. About 4-5 cups.
Method :
Pressure Cooker
- Take 1 cup of rice in a vessel ,wash it 3-4 times in cold water. Drain off the excess water.
- In the pressure cooker , using the same cup add 2.5 cups of water .
- Add the rice and spread the rice evenly in the pressure cooker.
- Close the lid and wait for the vapor to start coming out. Now put the whistle.
- Puff of the stove after 3 whistles.
- Wait till all the pressure is released , check the rice.
- Transfer the rice to another vessel and stir it slightly so that the rice remain non -sticky. Serve it with some curry.
Open Vessel
- Wash the rice 3-4 times in cold water and soak it in water for about an hour.
- In a wide thick bottom vessel take 4-5 cups of water and keep it on a stove to boil.
- Once the water starts to boil , transfer the rice to the vessel and stir it so that the rice does not stick to the bottom .
- Allow it to boil , stir it in between. It will take about 45 mins to an hour to cook.
- Check if the rice is done by pressing it between your fingers and pressing it.
- Once done , drain the excess water using a colander. The rice is ready to be served.
Tips
- The washed water from the rice is very good to water the plants.
- The water drained after cooking the rice can be used for washing hair , face and even as natural starch for your cotton clothes.
- Water left after cooking rice is called “Kanji”. In many southern states such as Kerala, people start their day with Kanji Water. It is a good idea to kickstart your day with some extra energy provided in a glass of Kanji.
