An ancient heirloom grain, Emmer or Khapli grew wild in the fertile crescent of the Middle East. Archeological evidence shows that it was cultivated in Indian subcontinent by 7000 BCE. Compared to modern wheat cultivars, ancient grains like Emmer have a lower gluten content, higher micronutrients and minerals.
