Ingredients :

  • Ikai Organic Jammu Rajma: 200 gm
  • Hung Curd: 50 gm
  • Cucumber: 1 
  • Tomato: 1 
  • Onion: 1
  • Coriander: 1
  • Garlic : 5 cloves
  • Mustard Sauce : 2 tsp
  • Ikai Organic Peanuts: Roasted as per taste
  • Ikai Organic Roasted seeds Mix: As per Taste
  • Seasonings: As per taste

Instructions : 

  1. Rajma or kidney beans to be soaked overnight or at least for 4+ hours in hot water and pressure cook in Instant Pot for 30 minutes. You can also use canned kidney beans.
  2. Veggies: Chop all the vegetables finely. Red onions, tomatoes and cucumbers. 
  3. Fresh Herbs: Finely cut fresh coriander. 
  4. Roasted Peanuts: Roast peanuts in the air fryer. You can also use store-bought peanuts.
  5. Seeds: You can add sunflower seeds or seeds of your choice.

Dressing:

  • Hung Curd: Use homemade curd to make hung curd. You can also use store-bought Greek yogurt.
  • Garlic: Use freshly minced garlic.
  • Yellow Mustard: You can use available yellow mustard sauce or the Bengali mustard sauce ( kashundhi). It gives a tangy flavour and a little heat to the dressing. If you don't have it, grind 1 tsp of yellow mustard, ¼ tsp black mustard, ¼ tsp jeera, ¼ tsp red chilli powder, juice of half a lime along with 1 tbsp of hung curd to a fine paste.  
  • Lemon juice: Freshly squeezed lemon juice is preferred for this salad. You can substitute any type of vinegar, like distilled white, or apple cider vinegar
  • Seasoning: roasted cumin powder, salt, and freshly ground black pepper.

Dressing:

  • Mix all the ingredients together in a bowl.
  • Adjust the seasonings to your taste. 

Serving Suggestions : Serve chilled as a light lunch with grilled paneer or chicken. Can be part of the meal bowl .

Tips :  Boost the salad with boiled egg or chickpeas for a high-protein meal.
