Pearl Millet is believed to have originated in West Africa, but was cultivated in India since pre historic times. It is a wild grass variety and archeological evidence points to its domestication around 2500 BCE. Bajra is the edible seeds of the Pearl Millet plant. These grains can easily be substituted for cereal grains or ground to make flour. Our Organic Bajra/Pearl Millet Flour is by nature Gluten free and a great alternative for people with Gluten allergies and Celiac disease.
Rotis or flatbreads made out of this flour are an excellent source of plant protein, complex carbohydrates, phytochemicals, antioxidants and polyphenols. Yogurt is added to this atta to make Bajre ki khatti rabdi, a Rajasthani traditional dish. It is also used to make Bhakri flatbread. To make the rotis softer, use warm water for kneading the dough! Use lukewarm or room-temperature water to knead the dough and let it rest for about 30 minutes. Roll it out by hand to make soft bhakris. This atta is also used extensively in Rajasthan to prepare traditional bajre ki khatti rabdi.
