Every 15th of August, the country comes alive with flags, parades, and speeches about the freedom generations before us fought so hard to win. It's a freedom we rarely stop to examine too closely, because it's simply always been there. But there's another, quieter kind of freedom most of us have never really had the freedom to know exactly what's going into our food.

 

Walk into any Indian kitchen and the same handful of staples show up every day: turmeric, chilli powder, salt, cooking oil, honey, rice. We reach for them without a second thought, because they feel too basic to question. And that's exactly the problem. Somewhere between the farm and the kitchen shelf, a lot of these everyday staples have picked up chemical shortcuts that were never meant to end up on anyone's plate.

 

Take turmeric for example. Naturally grown turmeric powder should look like a soft, slightly dull mustard yellow, not the almost fluorescent shade you see in some packets on supermarket shelves. That extra brightness often comes from synthetic colouring, layered on top of a crop that may already carry pesticide residue from intensive farming. Chilli powder tells a similar story, with colour sometimes propped up artificially rather than earned from the chilli itself. Recently Chinese authorities rejected select dry chilli consignments and suspended three Indian exporters for allegedly containing excessive levels of methamidophos. Chemicals that are very harmful for health. 

 

Honey has its own quiet compromise. Several investigations into packaged honey sold across India have found bottles diluted with sugar syrup sweet enough to fool the tongue, but stripped of the enzymes and nutrients that make raw honey worth choosing in the first place. Salt goes through its own kind of processing: most table salt is refined and dosed with anti-caking agents to keep it pouring freely, losing the trace minerals that natural rock salt still holds onto. Even cooking oil isn't immune; a lot of what lines store shelves is extracted using heat and chemical solvents rather than the slower, traditional cold-press method, which quietly changes both its nutrition and its flavour.

 

None of this is meant to make you afraid of your own kitchen. It's simply worth knowing what “clean” actually means, so you can start choosing it on purpose instead of by accident.
